We’ve found that you can use heart of palm in just about anything! Sweet potato and palm “potato salad,” and palms and eggs in the morning are two favorites. In general, it is easiest to follow your favorite recipe, such as one for potato salad, and then add diced palm heart to taste. We are also finding recipes from India, Africa and, of course, South America, with palm hearts used in curries, chutneys and salsa. When baking the entire heart, we found that cinnamon, ginger and brown sugar was a good combination. We added a little butter as well and it seemed to help the suffusion of the flavors.
